Passionfruit 75

I came across this cocktail in The Madrusan Cocktail Companion by @michaelmadrusan and @zaramadrusan. Rather than a traditional French 75, it swaps in passionfruit syrup for a bright, tropical twist. Gin, passionfruit, and lemon work beautifully together. My partner loves Saturns, so he definitely stole this one from me after one sip. Topped with Champagne, it is bright, balanced, and effervescent.

Gin and apricot brandy set the foundation, lemon keeps it bright, and orgeat adds body and subtle nuttiness. Champagne cocktails are at their best when the bubbles lift a simple, well-structured build rather than compete with it.

Air Mail

This cocktail dates back to 1930. It is essentially a Honeysuckle topped with Champagne. It is crisp, slightly sweet, and perfectly refreshing, with the bubbles adding a lively, effervescent texture.

This cocktail was created in 2016 by Zachary Gelnaw-Rubin at the now-closed Lion Lion in New York City. It is a riff on the Business by Sasha Petraske, which itself is a variation on the Gimlet. The addition of pineapple brings a subtle tropical note and a nice frothy texture. The structure is familiar, but the drink is a little more playful, which fits the name. Bennett

The classic cocktail dates back to 1930 and is attributed to “Jimmy,” late of Ciro’s in London. It is essentially a Gimlet variation, built with fresh lime juice and finished with Angostura bitters. The bitters add spice and depth, giving the drink a little more structure while keeping it bright and straightforward.
